Pap is a smooth porridge that is enjoyed for breakfast, served with cream and a drizzle of honey.
Pap is typically made from corn that has been soaked and fermented for days and then wet milled. With Glenn’s Floury Corn, the soft kernel texture and high yield of flour allows us to simply mill and sift the whole grain. Ngozi then shows us how to prepare the dish with water and heat.
Ngozi mixes corn flour into a batter with cold water, then pours in boiling water. She cooks and stirs until the pap reaches the desired consistency.
