Golden Gluten-Free Corn Bread
At long last, a cornbread that’s just corn! Glenn’s Floury Corn gives these springy, golden muffins the texture, color and flavor they need. Make them as muffins or a loaf.
Ingredients:
• 2 cups whole grain Glenn’s Floury Corn Flour
• 1 tbsp baking powder
• ½ tsp salt
• ½ cup sugar
• ½ cup butter
• 2 eggs
• 1 cup milk
Instructions:
• Mix together all dry ingredients in one bowl except for sugar.
• Mix together all wet ingredients plus sugar in a separate bowl.
• Combine wet and dry ingredients. Mixing in a blender makes for a fluffier muffin and is easier to fill muffin tins.
• Spoon or pour batter into muffin tins. Do not overfill.
• Bake at 350F for 25 minutes.
• Test with a toothpick to ensure muffins are cooked through.
• Remove from muffin tin and cool before eating.
• Yields 12 muffins, or one loaf.
