Gluten-Free Corn and Flax Chips

Enjoy these simple and healthy crisps with your favorite accompaniments.

Oven temperature: 400 F


Ingredients:
• ½ cup whole grain flour from milled Glenn’s Floury Corn
• 2 tbsp flax seeds
• ¼ tsp salt
• ½ cup water
• Optional olive oil to brush and kosher salt to sprinkle

Instructions:
• Preheat oven to 400F.
• Combine all dry ingredients together.
• Stir in water and rest the batter for 15 minutes.
• Roll out dough to 1/8 inch thickness on a surface with a light dusting of corn flour to prevent sticking.
• Cut dough with a circular cookie cutter and space out crackers on a lightly-greased, or parchment-lined insulated baking sheet (or a double-stacked baking sheet).
• Bake on the center rack for 10-13 minutes, flipping them after 5 minutes.
• After flipping, you may opt to brush with olive oil and sprinkle with kosher salt.
• At 10 minutes, begin watching crackers closely to ensure they do not burn. Cook time may vary depending on dough thickness.
